Creamy Chicken Jalapeno Bake

This recipe is AMAZING! One of my absolute favorites! It's easy to make and a bonus, it freezes GREAT! Winning!!!


Recipe is 6 servings of lean proteins and low carb! If you follow Optavia - Each serving is 1 leaner, 3 condiments and 1 fat. To make each meal a complete 5&1 complaint meal, just add 3 greens. For me, I added 1 cup or 6.34 oz. riced cauliflower (2 greens) and 1/2 cup or 3.24 oz. steamed broccoli. The riced cauliflower and broccoli that I used were both frozen. So, I steamed them both prior to putting in the bowls. Makes it easy for a hot complete meal now, steamy, creamy, yummy deliciousness!

This meal also freezes perfectly! I made the entire dish, 6 servings, ate 1 and froze the other 5. I made the bowls a complete Lean & Green meal- with 1 leaner, 3 greens, 1 fat, 3 condiments. Totally Optavia 5&1 compliant. Now, when I have a busy day or a rushed week, I can just pull out one of my frozen Creamy Chicken Jalapeno Bake bowls and have a delicious meal! Easy peasy!!

Chicken Jalapeño Bake

(6 servings, per serving: 1 Leaner protein, 3 condiments, 1 fat)


Ingredients:

2 ½ pounds Chicken Breasts

1/4 cup Jalapenos (De-seed if you aren't a fan of spicy)

~Divided if you want to put some on top

10 oz. low fat Cream Cheese

1T olive oil

4 oz. Reduced fat Shredded Cheddar

2 oz. Part Skim Shredded Mozzarella Cheese

1/4 cup Frank's Red Hot Sauce

1/4 tsp Salt

½ tsp Pepper to Taste


Directions:

Pre-heat oven to 400F. Season chicken breasts with salt and pepper, then lay on a cooling rack over a cookie sheet wrapped in foil. Bake chicken breasts for 40 minutes at 400F. If thin breasts reduce time.


Once your timer hits 20 minutes, start on the filling. Add olive oil into a pan over medium heat. Once oil is heated, add jalapenos into the pan.


Once jalapenos are soft and cooked, add cream cheese, and frank's red hot to the pan. Mix together until creamy and combined.


Remove chicken from the oven and let cool slightly. Lay chicken into a casserole dish (11x7 casserole dish works

great), then spread cream cheese mixture over it, then top with cheddar and mozzarella cheese.


Bake for 10-15 minutes at 400F. Broil for 3-5 minutes to finish. Optional: Top with extra jalapenos before you broil.



To make it a full Optavia Lean & Green – add 3 greens of your choice. I put a bed of riced cauliflower and steamed broccoli in each container to make 1 complete meal. These meals

freeze GREAT! Freeze and pull out later for an easy quick meal!

½ cup or 3.24 oz Steamed Broccoli (from frozen)
