Palmini Lasagna for 1 - Optavia 5&1

Do you love lasagna but don't want to make a gigantic casserole dish of it AND you are watching the foods you eat? Here is a super easy, quick recipe for a healthy version of one of my favorites.
Optavia 5&1 compliant
If follow Optavia (or another low carb diet plan), this lasagna is 5&1 compliant. One serving equals 3/4 leanest, 1/2 lean, 3 greens, 1 fat, and 2 (or 3) condiments - your choice.
This is a super yummy meal that fills that lasagna craving and its made in a single serving. Which, can also be frozen for a later time on those rushed nights that you have no time to cook or just don't know what to eat. This will save you from making a not so great decision when in a pinch for a meal.
Palmini Noodles - life savers!
If you haven't tried Palmini Noodles (hearts of palm) you are missing out!! I order them on Amazon and I am sure you might be able to find them in stores. But for me, it's a no brainer with Amazon as it just shows up at my door. These noodles have the consistence of a regular noodle. You cook then like a spaghetti noodle. I tend to shorten the cook time (cuz I am I'm patient) which just created a firmer noodle. It is your preference on how long to cook them. They help absorb the flavor in of the meal you are cooking in. I love them for an easy "green" for any meal - 1 package equals 2 greans so its such a great easy shelf stable green that for you to take anywhere.

A few tips for an even easier meal: 1 cook my 99% leanest ground turkey in advance and freeze it in weighed, labels baggies and place in he freezer for quick and eat pull out for any meal, pasta, lasagna, taco Tuesday and so much more. Again, in pinch this is awesome to have on hand.
So here goes... Palmini Lasagna for 1
Recipe: Palmini Lasagna for 1 - Optavia 5&1
3/4 Leanest + 1 Lean, 3 Greens, 1 fat, 2 (or 3) condiments
5 oz. Leanest ground turkey (98% lean) = 3/4 Leanest
2 ounces (1/2 cup) reduced fat shredded cheese or mozzarella cheese counts = 1 Lean
1 bag Palmini Hearts of Palm Lasagna sheets = 2 greens
1 cup Victoria White Linen Marinara Sauce = 1 green
10 black olives
2 laughing cow wedges – reg lite = 2 condiments (If you like it extra cheese, then use 3 wedges = 3 condiments)
1. Cook ground turkey, season if desired (count as a condiment)
2. Rinse and cook lasagna sheets per package instructions
3. Take desired container and place 1 layer the lasagna sheets on the bottom. Then add ¼
cup marinara sauce, then sprinkle in some ground turkey. Break up 1 laughing cow
cheese and sprinkle on this layer. Sprinkle some of the cheese to finish off this layer.
4. Next repeat for the next layer.
5. Top off with a layer of the noodles and sprinkle the remaining cheese on top.
6. Warm in microwave to melt the cheese and enjoy. OR place in refrigerator or freezer
for later. *If frozen, pull out and let defrost; then microwave and enjoy.
